What Do You Mean Pizza Sauce is “Technically” Not Cooked?

Most people making pizza sauce use peeled plum canned tomatoes, San Marzano if they are smart. Peeling and canning involves steaming, which technically cooks the tomatoes. The reason for not simmering them like marinara is to preserve texture — pizza sauce should be slightly chunky. Simmering would make it looser. It also keeps the tomato flavor “bright” and fresh-tasting. Many people use marinara as pizza sauce, and that’s fine, but traditionalists avoid extra cooking.

This recipe makes a lot because small cans of San Marzano Italian peeled plum tomatoes aren’t sold. For authentic flavor, use the real tomatoes. Dad suggests:

  1. Make pizza the day you make the sauce.
  2. Use leftover sauce the next day for a quick spaghetti with meat sauce.
  3. Freeze any remainder flat in ziplock bags. Break off a chunk when needed for dipping mozzarella sticks or other dishes. No need to defrost the whole batch.

  • 1 can San Marzano Italian peeled plum tomatoes
  • 1 can tomato paste
  • 1 tablespoon salt
  • 1 tablespoon oregano
  • 1 tablespoon basil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon sugar
  • 1 tablespoon olive oil

Instructions

  1. Add all ingredients to a blender.
  2. Blend for about 20 seconds until semi-chunky (depending on your blender).
  3. Use immediately to make pizza.
  4. Freeze any leftover sauce in small bags for later use.
